Conservación de las propiedades nutraceúticas del Aloe Vera (Aloe Barbadensis Miller), mediante técnicas de secado

چکیده
Se realizó el análisis de las aplicaciones y técnicas secado para la obtención polvo aloe vera, usado en elaboración productos alimentarios, farmacéuticos cosméticos. Para lo anterior, se tuvo cuenta existentes aquellas que permiten mayor conservación sus propiedades nutracéuticas funcionales éstos productos, garantizando inocuidad seguridad consumidor. una descripción respecto al funcionamiento algunas pautas los equipos, seleccionando método deshidratación más adecuado producir un producto alta calidad. desarrollo éste, consultaron principales bases datos como Science Direct, EBSCO, Springer Journals, Scopus, ProQuest Central, Redalyc, Wiley Online Library entre otras. determinó, permite del vera fueron: por aspersión, liofilización ventana refractante, debido a bajas temperaturas usadas, cual evita degradación componentes (dada sensibilidad gel superiores 50°C). En cuanto costos tiempo operación, aspersión es tecnología presenta mayores beneficios.
